Dominica dares you with its infamous "mountain chicken"—a misnomer for a prized frog delicacy—best washed down with a potent rum punch that'll put hair on your chest. Tobago counters with a feast of curried crab and dumplings, best devoured with sand between your toes in charming Charlotteville. Dominica's callaloo soup, a hearty blend of local greens and coconut milk, and Tobago's coo-coo, a cornmeal and okra dish often served with stewed fish, round out the island flavours.
