In Casablanca, savor the spice-market scents that waft from simmering tajines, the tender, slow-cooked lamb falling from the bone. Lanzarote offers a volcanic bounty: sea-salt-encrusted wrinkled potatoes, doused in mojo verde, a garlicky coriander sauce, and sip smoky, basalt-soil malvasia wines.
